Blast Chiller
Quickly cools or freezes food products by blasting with cool air. The thermometer continuously checks food temperature to accurately determine the time reading to achieve the set temperature.

Convection Ovens

Full sized commercial ovens with a fan that circulates air for faster, more even cooking. Oven A operates on low fan only. Oven B operated on low and high fans.

Dehydrators

2 Industrial sized Harvest Saver dehydrators for bulk dehydration needs.

Electric Stand Mixer
20 gallon floor stand-mixer with dough hook, whisk, and flat beater attachments.

Food Processor
Commercial sized food processor. Multiple attachments for a range of functions including pureeing, slicing, dicing, etc.

Gas Range

4 Burner gas cooktops with small gas oven.

High Temperature Sanitizer
Commercially high temperature sanitizing dish washing machine.

Immersion Blender
Hand-held kitchen appliance with a blade at the end of the shaft that be immersed directly into a pot or a bowl to blend ingredients.

Electric Meat Slicer
Kitchen appliance with a sharp, rotating blade that is used to cut food like meat, cheese, and vegetables into uniform slices.

pH Meter
Calculated pH value of solutions and sauces to ensure food safety requirements are met and maintained. This is especially important for canning practices.

Pneumatic Filler

A machine that uses compressed air to fill containers with liquids or pastes. Great for bulk bottling.

Tilting Kettle

6 Gallon steam-jacketed cooking pot designed to efficiently prepare large quantities of food like soups, stews, and sauces. Its key features include a steam-jacketed system for even heating without scorching, a tilting mechanism (manual or power) for easy pouring and emptying.

Tilting Skillet

30 Gallon vessel with heated base to be used for a wide variety of cooking tasks like braising, sautéing, grilling, frying, and simmering. Its primary function is to cook large quantities of food and then, with a manual or electric tilt, safely empty the contents into storage or serving containers.

Vacuum Sealer
Chamber and heat sealer that removes air from compatible plastic bags, creating an airtight, vacuum-sealed package to preserve food.

Water Activity Meter
Device that measures the water activity of a sample, which is the amount of "free" water available for microbial growth and chemical reactions. This measurement is a food safety requirement for any dried and packaged food products.
